top to bottom: Sunshine kabocha squash, Sweet Dumpling squash, Small Wonder spaghetti squash
Autumn is on its way, and it’s not only the turning of the calendar page that tell us so. The morning was crisp and cool. I wore a sweatshirt and socks while I milked the goat this morning. And our fields are lined with gorgeous bushel baskets of winter squash.
Most varieties have to cure for a few weeks, and so you won’t see them in your CSA shares or on the market tables just yet. But look for the Sweet Dumplings and the tender-skinned Delicatas this week. They don’t need to cure. They’re like little promises of all the fall fare that’s on its way.
