I used to love beets as a kid because my grandmother would let me dye hard-boiled eggs in the leftover beet juice. Who doesn’t like a swirly pink and purple egg?

I love beets! I love that they stain your hands or salads or whatever they touch. I like that they taste like they were once in the ground. And I like them pickled.

Because when you roast them soooooo slowly then put them with goat cheese and a little vinaigrette, and toss them on some spicy little salad greens you have a little slice of sweet heaven. Yum. Lovely picture, by the way.
