What to do with the last few vegetables I waited too long to use?
We had this great idea: make brochettes. Scrub the summer squash and tomato and sweet pepper or whatever you have. Marinate for a few minutes to half an hour in: olive oil and lemon juice with herbs to taste (e.g. marjoram, basil, salt, cumin). Cut into chunks and thread onto brochette sticks. Broil in oven under medium high broiler for 7-8 minutes, turning once. Simple, fast, light, delicious!
